lime roasted sweet corn salsa — happy Memorial Day weekend!

  • double as you need — makes ~4 cups:
  • 2 ears of sweet corn
  • 2 limes
  • 2 ripe avocados
  • 1 large tomato
  • 1 ripe mango
  • 4 Tbsp fresh cilantro
  • 2 shallots
  • salt to taste
  • 1/4 tsp jalapeño

To relax, Hoyd and I popped over to Peekskill for some new sights and relaxing quiet. I had a hankering to go hiking up in Cold Spring like last weekend, but the sweetest old lady on the train started telling us about her town — and we got off early at Peekskill. The whole day turned out nothing like we imagined — found ourselves trapped by the rain in a funny restaurant — but we got sanctuary outside of the city and enjoyed some sweet time together!

rosemary garlic butter with steamed artichoke — mom visits!

  • 3 artichokes
  • 2 sprigs of fresh rosemary
  • 1 medium garlic clove
  • 1 stick or 1/2 cup of salted butter
  • 1 tsp of fresh lemon juice

This past week Mom visited, and I tell you what, we had such a good time! My favorite part was riding the scenic train up to Cold Springs, NY in search of a lil’ adventure. Oh my god, I love this woman. Besides her impeccable taste, class, and easy grin, she has a fellow heart for hiking. I’ve nowhere near the experience as this native Californian, what with her always backpacking the mountains as a teenager, but what I lack in experience I make up for in enthusiasm — and back-up snacks. (We did run out of water, but that’s another story!)

pistachio pear apple energy bars — go attune foods!

  • Makes ~8 bars:
  • 1 1/2 cup Attune brown rice cereal
  • 1 medium Bartlett pear
  • 1 small green apple
  • 1/2 cup pistachios
  • 1 1/2 Tbsp ground flaxseed
  • 3 Tbsp rice milk — or nondairy choice
  • 1/4 cup honey
  • 1/2 tsp cinnamon
  • 1/2 tsp salt
  • 1 Tbsp room-temp coconut oil

ginger carrot miso dressing — back from chicago!

  • 2 1/2 Tbsp freshly minced ginger
  • 3 medium-sized carrots
  • 2 small cloves of garlic — minced
  • 2 heaping Tbsp of yellow miso
  • 2 Tbsp of apple cider vinegar
  • 2 Tbsp of sesame oil
  • 2 Tbsp olive oil
  • 1 Tbsp water
  • sprinklin’ of sesame seeds

Wow, this past weekend was a whirlwind. Among traveling by my lonesome to the Windy City, I also had the pleasure of attending my first food blogger conference!!!
