Refreshing Cucumber Mint Tonic

refreshing cucumber mint tonic – cheers to health

What’s more refreshing than drinking your veggies? Ever since the greenmarket started overflowing with spring vegetables and fruit, I’ve been hankering for more fresh juices. Rhubarb lemonade! Spinach beet juice! Celery agua fresca! (Just kidding on that last one…maybe.) And now, cucumber mint tonic.

Cucumber and mint work together as seamlessly avocado and lime, but here’s the kicker: add in a hearty amount of apple cider vinegar. Yes, the stuff you use to attract houseflies and soothe sunburns. Shockingly, when mixed with cukes and mint the result is sweet, rejuvenating, and tangy in the best way. I found out this fun food fact thanks to The New Persian Kitchen on Genius Recipes.

Holiday Hangover Cure!

holiday hangover? homemade electrolyte drink & VROU

Hope y’all had a happy Thanksgiving. And to my international friends, hope your Thursday was swell. I savored the day with my boyfriend’s family over in New Jersey! The food was a surprise (interesting Dominican dishes), but everything else felt right at home (laughter and hugs).

I noticed that while everyone enjoyed the holiday, many friends didn’t have a great time the morning after. And with the mulled cider, eggnog, and coquito flowing, who can resist enjoying a holiday libation? So here’s another drink, but more on the healthful side.

I borrowed this recipe from Don’t Mess With Mama, and as she explains it, electrolytes are basically salts. When a person heavily exercises (sweats) or “expels fluid,” he or she loses these electrolytes. This juice is meant to be a replacement for Gatorade (which isn’t great for you anyway), and I think it’s tasty for just a nice juice in general. Whether you’re dehydrated from energizing or enjoying spirits, I highly recommend this flavorful, hydrating drink.

grilled pineapple & pineapple cilantro smoothie – from the beach to Memorial Day

    grilled pineapple – serves 5
  • 1 ripe, yellow pineapple
  • 1 lime or 2 Tbsp. lime juice
pineapple cilantro smoothie – serves 2
  • 3/4 cup ice
  • 1 lime or 2 Tbsp. lime juice
  • 6 stems or 1 cup spinach
  • 1 cup pineapple chunks
  • 1/2 avocado
  • 1/4 cup cilantro
  • 1/2-in ginger knob or 1 tsp. minced ginger

My friends and I were all in favor of celebrating this warm change of weather with a potluck picnic. After the forecast laughed and changed to a whimsical drizzle, we continued indoors with a front yard BBQ.

Grilling with friends :)

Now as a native Southern gal, I appreciate barbecue. I just don’t partake in it. I love my veggie- and fruit-laden meals, so this event was just an opportunity to be inventive with vegetarian options. After hemming and hawing at the grocery store, I spied the golden opportunity: fresh pineapple. At the shindig I sliced the fruit in thick rings, squeezed a layer of lime juice on top, and set them out to cook.

So if you plan on breaking out the grill for Memorial Day, I highly recommend buying a pineapple. It’s nice to finish a hearty meal on a fresh, citrusy note. Not to mention it’s super easy to cook.

    Makes 2 quarts

  • 3 fresh strawberries

What I love about this drink, even more than the refreshing taste, is the mind-numbing simplicity. Rinse ingredients. Cover with water. Place in direct sunlight. Sound good?
