The thing I love most about summer in the city are the random rooftop parties. Sometimes they’re huge and well-catered, and other times intimate and spontaneous. My favorite leans toward the latter.

The other weekend I had the great pleasure to hang out with Elyse from Brooklyn Soup Club. After helping shoot some cooking videos, she treated me to the most fantastic veggie meal I’ve had in a while (including yours, Mom, sorry).

The plates ranged from rich, just-made ricotta on crusty bread to a homegrown, leafy salad. In the forefront of flavor was the chickpea quinoa salad with tahini dressing. After the second (or fourth?!) helping of this savory treat, I realized I needed to make this at home.

I loved the simplicity with which Elyse brought the elements together. So while I wish I’d been paying more attention in the kitchen, I think I got most of this delicious and simple recipe right. fig mint salad – to barcelona and back

    serves 2
  • 4 figs
  • 7 mint leaves
  • 1 cucumber
  • 1/2 cup almonds
  • 1 small head of butter lettuce
  • 1 Tbsp honey
  • 1/2 tsp mustard
  • 2 Tbsp olive oil
  • 2 Tbsp balsamic vinegar
  • salt to taste

Hi y’all! I’ve been away for a while, partly due to a trip in Spain. My boyfriend has been working in Europe for a month, so I enjoyed some sweet vacation in Barcelona with him.

It was my first time in the country, and I loved soaking in all the details. One of my favorite afternoons was spent strolling through the Barri Gòtic together – observing the locals and peeking down side streets.

strawberry quinoa salad with a kick – summer strawberry pickin’

    serves 4!
1 cup uncooked quinoa
1/2 cup almonds
1/4 cup minced red onion
16 oz strawberries*
1/2 avocado
1/4 cup cilantro
6 mint leaves
1 jalapeño
1 Tbsp olive oil
2 limes
1 tsp honey
salt to taste

Recently my boyfriend and I wandered up to Hudson, NY for our second anniversary. Besides the sweet finds of boiled peanuts, lonesome fields, and tranquil drives — we happened upon a family-owned, organic strawberry picking field.

We found the ripest jewels nestled on spotty leaves and soft ground. We tried not to sneak too many into our mouths before they hit the basket.
