ginger carrot miso dressing — back from chicago!

  • 2 1/2 Tbsp freshly minced ginger
  • 3 medium-sized carrots
  • 2 small cloves of garlic — minced
  • 2 heaping Tbsp of yellow miso
  • 2 Tbsp of apple cider vinegar
  • 2 Tbsp of sesame oil
  • 2 Tbsp olive oil
  • 1 Tbsp water
  • sprinklin’ of sesame seeds

Wow, this past weekend was a whirlwind. Among traveling by my lonesome to the Windy City, I also had the pleasure of attending my first food blogger conference!!!

first food blogger conference — cookin’ in chicago!

Hi, y’all!

No food, but I couldn’t help but post something delicious:

Just wanted to share the good word that I’m headed to Nourished — A Food Blogger Conference in Chicago! (Yippee x 500) It’s a Gluten-Free and Allergy Friendly get-together for bloggers. Anywho, I’ll be keeping updates via Twitter, so please feel free to follow along.

Hopefully I’ll bring back many more tasty recipes and cool blogs for you to follow.

vegetarian white bean burger heaven — and gluten-free

  • 1 cup dried, white cannelini beans
  • 1 bay leaf
  • 2 cups water
  • 3 cloves garlic
  • 1/4 large yellow onion
  • 1/4 cup nutritional yeast — available at health stores i.e. cheap at Whole Foods in the bulk section
  • 1/2 cup sprouted bread crumbs — gluten-free!
  • 1/3 cup raw pumpkin seeds
  • 2 Tbsp olive oil
  • 1 Tbsp apple cider vinegar
  • salt & black pepper
  • *Makes 2 large patties

Thank god for friends. I tell ya what, they make good moments even shinier. Luckily this weekend was one for catching up with old friends, and making new ones. On Saturday one of my closest girlfriends and I scoured Brooklyn for tasty food — Smorgasburg reopened this weekend! — then devoured homemade grub over good talk late into the night. (I’ve noticed a pattern in my close relationships…almost all revolve around food.) Then Sunday in Brooklyn brought a cooking class, where I met a hilariously fun bunch of ladies. Afterward I celebrated a birthday with old friends, where we ate and drank for a few hearty hours. (Again, the food thing.)

Food to me isn’t just the taste, scents, and texture, it’s the memories of laughter associated with each dish. So I hope to create a few extra good times with this new recipe, because really, that’s what makes it delicious.

aunt lara’s northern white bean salad — it’s still cold, so let’s warm up

  • 1 cup white beans
  • 1 1/2 cups wild rice
  • 1/2 cup olive oil
  • 1/2 cup lemon juice — about 1 1/2 lemon’s worth
  • 1 teaspoon minced garlic or more
  • 1 teaspoon salt
  • 1 teaspoon freshly ground black pepper
  • 1 bunch organic rainbow chard
  • 1 red bell pepper — diced
  • 1/2 fennel bulb — thinly sliced
  • 3-4 stalks of green onion — chopped
  • 1/2 cup chopped parsley

Dagnabbit, New York. You tease me with highs of 70 and warm breezes, then give me the cold shoulder with your regular 31° freezes. At least I can celebrate the slow arrival of spring with bright greens! (I have this insanely rational thought that if I eat and dress like it’s spring, eventually the weather will take note and follow suit. Emphasis on rational.)
